White Bean & Roasted Red Pepper Salad

White beans, red onion, roasted red peppers, and a balsamic vinaigrette gives this zesty salad delicious depth of flavor, color, and texture. This high fiber, high protein salad makes for a quick side dish, snack, or even as light meal since it can be whipped up in a matter of minutes. This salad is also perfect for making in advanced for it allows for the all the flavors to absorb into the beans.

White Bean and Roasted Red Peppers Salad

Yields: 6 servings Serving Size: 1/2 cup Calories: 156 Carbs: 24 g Fat: 2 g Protein: 9 g

Ingredients: 

  • 2 (15 ounce) cans small white beans, drained and rinsed
  • 1/2 cup chopped roasted red peppers
  • 1/4 cup chopped red onion
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • salt and pepper to taste

Directions:

  1. Drain and rinse beans. Place in a bowl. Add roasted red peppers and onion.
  2. In a small bowl whisk together the balsamic vinegar and oil, pour over bean mixture.
  3. Salt and pepper to taste.
  4. Chill in the refrigerator for at least an hour or enjoy immediately.
